Ingredients:
4 LT Farm Meats Lamb Chops
Oil for cooking in pan
Marinade
1/8 cup olive oil
Juice of 1/2 lemon
1 tsp dried oregano
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
Directions
1. Combine all marinade ingredients, pour over chops and marinate 1/2 hour or longer for richer flavor, upto overnight in refridgerator.
2. Heat oil in skillet pan until just starting to smoke (cast iron preferably). Fry 3-4 minutes each side. (Usually 3 minutes medium, 4 minutes for well done.) Do not over cook.
3. Let sit for 5 minutes before serving.
