One Skillet Sausage and Cheesy Rice


If you are looking for a recipe with less clean up, that is filling and delicious, here is one for you and your family. I added carrots and celery for an added crunch and vegetable boost.


Ingredients:

1 package of LT Farm Meats Sausage Links

1 T butter

1/2 C chopped onion

2 cloves garlic, minced

2 1/4 C chicken broth or bouillon

2 C minute rice (brown or white)

1-2 C chopped vegetables - I used green pepper and sundried tomatoes. Other ideas are kale, spinach, green peas, carrots, etc.

1 can Cream of Chicken soup

1/2 C sour cream or yogurt

3/4 C milk

! C shredded Cheese

1 pinch of red pepper flakes, optional


Directions:

Brown sausage in a skillet and remove to plate when done. Add butter to the skillet and saute' vegetables until soft, adding garlic at the last minute. Add chicken broth, bring to a boil and add rice. Cover and simmer 10 minutes until rice has absorbed most of the liquid. Add soup, sour cream, cheese and milk. Cover and let melt on low heat. Stir to combine, add sausage and pepper flakes if desired. Serve with sides of your choice.
